There may be variation in form & glaze. Japanese mortar (suribachi, literally grinding bowl in English) has the lines unlike that of most of the other countries. They’re made for grinding foods finely with less power. My mortar’s grinding area look like swirling where other Japanese mortar has lines straight down. It prevents ingredients from moving upwards of a mortar, they keep staying in the swirl while grinding. It makes even grinding food much faster with lesser effort, comparing with normal mortar, & It also reduces frictional heat, which keeps scent of food. Besides preparing foods, my mortar are beautiful on your dinning table as a serving bowl or condiment bowl. For example, you can grind a clove of garlic in it, & then add some vinegar, olive oil & salt. After mixing them up, just put the vegetables that you like & dress in it. Then you can bring it to the table directly. Of course nuts, herbs, & spices will be much enriched its flavor by grinding in my mortar. This is so fresh & flavorful, the simplest & best salad, I believe. My mortar has pouring mouse, also well for making sauces. Making savoy soup for ramen is another good option. Usually Japanese mortar is easy to use for right-handed people (the direction of the lines are made so), though my mortar can grind both clockwise & anti-clockwise. People who are left-handed can use comfortably too. I also have the pestles (surikogi, literally grinding stick in English) that match to my mortar. They are made of Japanese natural wood. Please take a look at the listing page. Before first use Grind the empty mortar with your pestle & rinse well. This makes the mortar & the pestle match each other. Also it can get rid of extra glaze. Tips for longer use To clean small food particles between the lines, fill it with warm water & let it soak for a while. Then scrub with natural scrubbing brush along with the line, not against.
