How to Upgrade Instant Ramen: Easy Ideas for a Better Bowl

Instant ramen has a reputation as student food, but it can be so much more than that. A pack of noodles is a blank canvas, ready in minutes and easy to keep in the cupboard. With a few extra ingredients you probably already have, you can turn it into a warming, filling bowl that feels a lot closer to your favorite noodle bar. As the evenings start to cool down in September, it is the perfect quick dinner.

Start With the Noodles and Broth

Choose noodles you enjoy as your base. There are classic wheat noodles, as well as rice, millet and other options, including gluten-free varieties like millet and brown rice ramen with miso soup. You can find a wide selection in our ramen noodles category.

The broth is where you can make the biggest difference. Try these simple swaps:

  • Use chicken, vegetable or mushroom broth instead of water for a richer base.
  • Use only part of the seasoning packet and build your own flavor, so the soup is less salty.
  • Stir in a spoonful of miso paste, a splash of soy sauce or a little sesame oil.
  • Add sliced garlic, grated ginger or chopped scallions to the pot as it heats.

Add an Egg

An egg is the easiest way to make instant ramen feel complete. There are a few ways to do it:

  • Soft-boiled: cook the egg separately until the white is set and the yolk is still jammy, then peel, halve and place it on top.
  • Poached in the broth: crack an egg straight into the simmering soup during the last few minutes and let it cook gently.
  • Egg drop: whisk an egg and slowly pour it into the hot broth while stirring to create silky ribbons.

Whichever method you choose, make sure the egg is cooked the way you like it before eating.

Bulk It Up With Vegetables and Protein

Adding vegetables and protein turns a snack into a proper meal. Quick-cooking vegetables can go straight into the pot for the last minute or two, while leftovers just need to warm through. Good options include:

  • Spinach, bok choy or shredded cabbage
  • Mushrooms, bean sprouts or sweetcorn
  • Frozen peas, edamame or mixed stir-fry vegetables
  • Leftover roast chicken, sliced pork or cooked shrimp
  • Cubes of tofu for a vegetarian option

Do not overload the pot. A handful or two of extras is plenty for one serving and keeps the noodles from going soggy.

Finish With Toppings

A few toppings at the end add flavor, color and crunch. Try sliced scallions, toasted sesame seeds, a sheet of nori, a drizzle of chili oil, a squeeze of lime or a sprinkle of fresh cilantro. A spoonful of crispy fried onions or garlic adds a wonderful crunch.

Once you start experimenting, you will find your own favorite combinations. Keep a few packs of noodles and some basic extras in the kitchen and a comforting bowl of ramen is never more than ten minutes away.
